When you create a ledger you have to define 4Cs. Accounting conventions is the fourth C. Accounting convention is an optional field but you must choose a value here if you are planning to use subeldgers with this ledger.
To answer you question you assign subledger accounting method to one or more ledgers using Accounting Setup screen of GL.
