I noticed that the VM snapshot file I've created keeps on growing in size about 500-600 MB/day. Ideally I think a snap shot should just be a recovery point and data should not be accumulating past that point. Correct me if I'm wrong. Could I simply delete the existing snapshot without having any data loss? I understand I may not be able to roll back if there is an issue. The size is not a big deal now as I have more than enough space left, but over time it may grow substantial at this rate. Please advise

Sorry for the late reply. Snapshots are not backups. It is only a change log of the original virtual disk. That is why the size grows. The change log in the snapshot file combines with the original disk files to make up the current state of the virtual machine. If the base disks are deleted, the snapshot files are useless.
Yes you can delete the snapshot through the front-end control panel.
